Filiera Eco-alimentare. Progetto per la valorizzazione delle carni di selvaggina: la gestione di prodotto sostenibile come strumento di stimolo al miglioramento ambientale dei territori alpini

In the Alps, the depopulation and the reduction of traditional activities have led to an exponential increase of the population of wild ungulates (wild boar, deer, roe deer and chamois) with consequent problems for the whole ecosystem.

In order to re-balance the alpine region it is therefore necessary to find new systems to manage this wildlife. This project aims at the creation of a local supply chain for game meat, with particular reference to the large ungulates, which is able to guarantee an ethical retrieval and proper ways to control the meat. These instruments are able to provide more safety food and economic benefits for the area. In this view, the creation of a "Food Supply Chain" aims at the improvement of the capacity of resilience of the region in face of environmental impacts due to issues of imbalances of wildlife population. At the same time, it could be able to provide a new source of income that means, for the whole territory, also a greater social resilience.
